I’ve sometimes seen a purple potato
And I always hope to see one
The only remaining question is
Is it better to see or eat one?
Here’s a very interesting recipe: Cod with Lapsang Souchong Oil and Puree of Violettes

Potatoes like that…
i want ‘em!
despite living in the bounty-filled island of crete, i have never ever seen one of those purple or red potatos in your photo; which leads me back to your question – is it better to see one or eat one?!
For me, the answer would be to see one, maria v. They are such a surprise visually. And somehow I like them better than the orange and purple cauliflowers now being bred and sold. They scare me a bit.
But I bet that in Peru, where purple potatoes are the usual sort of potato, they are favorites to eat!
Whoa. These potatoes look like their ancestors went through some radioactive tough times. Or else raised on some alien but Earthlike world, and brought back to show prospective emigrants their happy future out there on the Purple Farms.
Carrots weren’t “born” orange. Perhaps, potatoes have changed colors too. They sure are “purty” to look at. It almost seems a shame to eat them and I happen to ADORE potatoes!!!
